Wine is used in the making of all Risottos I have ever made, all of the alcohol is cooked out during this process so that should not be a concern. If there is another reason for your no wine requirement try substituting stock for the wine and using a little acid, such as lemon or lime, to adjust the taste. Check out epicurious.com for reciepes, it my fave.
Good Luck

Buy cooking wine, it doesn't have alcohol. Or marinate the pork steaks in italian dressing for 1 hour before cooking, then grill, bake or however you want to prepare them. For the risotto you can just use chicken broth and not the wine or use cooking wine.
